It’s a BOY!

Humpback Whale Watching

Most people do not have the opportunity to observe Humpback whales in the wild, so not only is this one of the most unique things to do on the Bay of Banderas, it is also eco-friendly, educational and absolutely breathtaking.

The unique opportunity to observe these marvelous marine mammals in their natural habitat not only increases public awareness and appreciation of wildlife but exists only in a few places in the world such as the Bay of Banderas.

Dive Sites in Puerto Vallarta

So what do you do if you like to dive but the person you are traveling with is a non-diver?

Luckily in Puerto Vallarta and the Bay of Banderas you have many options.

One of the options is having the non-diver learn this incredible and eye opening activity. We offer a variety of  “Get Introduced” learn to dive programs for children ages eight years of age and older to adults of any age. These courses are easy to do even while on vacation and the dive instructors are some of the best available.

Another option is to reserve a trip to Las Caletas where divers and non-divers alike can partake in whatever activities suit their fancy while enjoying one of the most beautiful beaches and jungles in the area as well as a gorgeous dive site.  Included in the trip is a buffet lunch, hiking, exploring Las Caletas and much more.

*Non-divers, you can join the divers by reserving only the Las Caletas day tour. While they dive, you can relax on land.

Cute Dolphin Photo

Yeah, I admit I am a sucker for dolphins but especially for dolphins AND cute kids.

Here’s one of my favorite photos taken at our Dolphin Center in Nuevo Vallarta with one of the cutest little girls in the world. No she is not mine so I am not even being biased!

Outdoor Adventure Map

Hands down, our Outdoor Adventure is the most thrilling and diverse Canopy and Adventure tour on the Bay of Banderas.

Located south of Puerto Vallarta, we take you across the bay to beautiful Boca de Tomatlan on an Apex speedboat and then inland via our fun and funky Mercedez Unimog inland to our lush tropical forest for zip-lining, rappelling and more.

What To Wear?

We receive a lot of emails from guests wanting to know what to wear or what to pack when they participate in our Outdoor Adventure or visit our Canopy Adventure Park.  And while we do have this info on our website I am going to expand a little bit further in this article.

The #1 rule is to dress comfortably and correctly. While the sundress or flip-flips may look great on you at the beach, neither are going to work for you when you zip from tree to tree or rappel down a waterfall.

We suggest you wear shorts, (but not too short as the harness and equipment sometimes make the shorts “ride up” and that is just not pretty or comfortable) and a cool top or T-shirt. And not “cool” as in; “Hey now that’s a really cool shirt!” but as in lightweight and light in color. But, if you happen to have one that is both, be sure to wear it because then you’ll be double-y “cool” for all of the photo opportunities.

If you are going on the Outdoor Adventure, you can bring with a change of clothes and we will provide a place to store them. We encourage this as you probably will get wet and if you want to do some extra exploration in town or a grab cold beverage after the tour, you may want to change clothes.

Next: closed toe shoes. You can wear tennis shoes, hiking boots, even bowling shoes if you like as long as they have a little traction. Keep in mind that they may get wet, so I wouldn’t pack the Prada sneakers if were you.

Did You Know?

Our Bay of Banderas is a host to literally tons of marine life, from the migrating humpback whales that join us late November through March, to the Olive Ridley turtles, giant manta rays and hundreds of varieties of fish and sea life.

One of the best times to scuba dive is actually in the summer months where the visibility can be upwards of 80 feet. While this is the rainy season here in Puerto Vallarta, our dive sites remain clear and the water is warm. Las Caletas Seafood Paella Recipe

If you have been to Las Caletas, you can attest that our chef’s seafood paella is fabulous.

If you haven’t experienced Las Caletas, our exclusive tropical get-away, you are really missing out on an amazing day tour and some seriously scrumptious Spanish seafood paella.
I should not be surprised by the volume of emails we receive from previous guests who want the recipe after they took the paella cooking lesson at Las Caletas.

This dish is that fantastic and worth writing for the recipe, but the best part is; it really isn’t all that difficult to make.
Below is our chef’s “no longer secret” recipe so you can astound your friends and family by serving this traditional Spanish dish, while recreating some enchanting Las Caletas memories.

Las Caletas Paella Recipepaella2

1 oz. Olive Oil
100 gr. Whole Shrimp
150 gr. Clams
100 gr. Crabs
100 gr. Cooked Octopus (or squid)
50 gr. Fish
30 gr. Peas or Green Beans
50 gr. Chopped Onion
50 gr. Green Pepper
50 gr. Tomato
2 Cloves Garlico
1 Sprig Parsley
1 Pinch Saffron (or Paprika)
250 gr. Rice
1 Cube Chicken or fish bouillon
1/2 liter Water

The first step is to heat up a few teaspoons of oil in a large and deep frying pan or paella dish on the stove at a high temp (if you are cooking for a very large group you can place your pan on an open barbecue.)

Then add the seafood (except the octopus) and let it cook for a couple of minutes until you see the color of the shrimp changing.
The octopus is added when the shrimp turn pink.
It is important that you pre-cook the octopus  otherwise it will have a chewy texture.

Next, add all of the vegetables and tomatoes into the oil with the rice which you will sautee for a few minutes.

Next add the Saffron and water (a good idea is to soak the saffron in the ½ liter of water beforehand, so as to even out the color).
The stock is then added along with your mixture of olive oil, garlic and parsley.

Stir well and then cover the dish with a lid or tin foil and leave to simmer on a low heat for approx 30 minutes or until the rice is cooked.

Scuba Report

The scuba crew just came back in and reported the average water temperature today was 82 degrees F and the visibility was excellent at 35 padi5starto 40 feet.
